Six Senses Rome: Heritage, Wellness, And Sustainability In the Heart Of The Eternal City

Six Senses Rome offers a European city escape for travellers from the UAE and wider GCC. Set within the historic Palazzo Salviati Cesi Mellini, Six Senses Rome opened its doors in March 2023 as the brand’s first urban hotel and a contemporary retreat in the UNESCO-protected heart of the city. The fifteenth-century palazzo has been meticulously restored, blending classical grandeur with modern sustainability. Its location – steps from the Pantheon, Trevi Fountain, and bustling Via del Corso – offers guests the best of both worlds: direct access to Rome’s most celebrated landmarks whilst maintaining an atmosphere of calm and reconnection.

Inside, Patricia Urquiola’s interiors reinterpret Roman classicism with a light, modern hand. Travertine stone and cocciopesto plaster nod to ancient craftsmanship, while abundant greenery and natural light connect interiors to the city’s lush terraces and gardens. Commissioned artworks curated by Federica Sala – from Sara Salvemini’s watercolours of Roman piazzas to Alberto Selvestrel’s sun-drenched photographs and Paolo Giordano’s reimagined classical sculptures – create a visual journey that bridges centuries. Particularly striking are Marco Emmanuele’s glass powder paintings, crafted from bottles collected on the Roman shoreline, which transform waste into radiant works of art – a poetic reflection of Six Senses Rome’s commitment to renewal and sustainability. The result is an atmosphere that is at once historic and forward-looking, rooted in Rome’s genius loci yet alive with contemporary creativity.

BIVIUM Restaurant-Café-Bar

A striking curved green marble bar and circular earth-toned steelwork overhead frames the vibrant social heart of the hotel: BIVIUM Restaurant-Café-Bar. Here guests are welcomed from morning through evening with an all-day menu crafted from the freshest local ingredients within the restaurant or its sun-drenched courtyard. The open kitchen, complete with Josper grill adds a touch of culinary theatre as chefs prepare farm-raised, grass-fed meats, organic eggs, line-caught fish, and seasonal vegetables sourced from nearby farms. Within the BIVIUM space, three specialty counters offer distinct indulgences: Aroma for expertly brewed coffee, Sapore for fresh produce and raw food creations, and for homemade sorbet and artisanal pastries. Whether settling into a lounge chair for a quiet coffee or aperitivo or gathering at a communal table with friends, guests are immersed in the flavours and convivial spirit of Rome.

NOTOS Rooftop

Panoramic views of Rome’s skyline set the stage for NOTOS, an open-air rooftop restaurant offering a refined dining experience from lunch through to late evening. The menu celebrates Mediterranean flavours with creative flair – season dependent, guests might begin with handmade ravioli filled with cacioricotta and smoked tomato, savour rosemary-marinated duck with cardoncelli mushrooms, or enjoy delicate amberjack paired with celeriac and raspberry. To finish, desserts such as a silky dark chocolate mousse with vanilla and hazelnuts or the playful Sorpresa Gastronomica – cantaloupe paccheri with basil and buffalo milk – bring a sweet sense of surprise. Seasonal set menus complete the experience.

Alongside these highlights, lighter seasonal bites, locally influenced cocktails, and botanical mocktails invite lingering afternoons and sunset aperitifs. As the city lights glow and music fills the air, NOTOS transforms with live performances, DJ sets, and curated culinary pop-ups, making it a destination for relaxed lunches by day and stylish gatherings by night throughout the warmer months.

Sustainability & Regeneration

The hotel’s careful refurbishment reflects an investment philosophy rooted in urban regeneration, cultural preservation, and ESG responsibility. Six Senses Rome continues to champion environmental stewardship, heritage conservation, and meaningful guest engagement with the local community.

One of Six Senses Rome’s signature initiatives is its partnership with the neighbouring church San Marcello al Corso, one of the city’s most historic. As part of the hotel’s pre-opening works, the marble façade and entrance were carefully restored, underscoring Six Senses’ commitment to cultural preservation. An example of late Basque culture, the church was almost completely destroyed by fire in 1519 and later rebuilt with its striking Carlo Fontana façade, richly decorated chapels, and the venerated wooden crucifix that survived the blaze – a relic long associated with miraculous intercessions and still central to Rome’s spiritual life today.

Beyond the visible grandeur, Six Senses guests are offered a rare privilege: entry to a hidden chamber that houses a painting by Flemish master Anthony van Dyck, gifted to the parish centuries ago and ordinarily closed to the public. The partnership also provides access to the 8th-century baptistery discovered beneath the church, where archaeological remains – including a large immersion tub and Roman walls – reveal yet another layer of the city’s past.

The palazzo’s respect and appreciation for its history is evident at every turn – from the monumental marble staircase and 600-year-old entrance columns to the fourth-century baptismal font which was uncovered during archaeological excavations at the beginning of the 1900s and is now displayed beneath glass flooring in BIVIUM.

In 2024, the property was awarded LEED Gold certification for sustainable design and construction, recognizing its commitment to energy and water efficiency and its use of 100 percent renewable power. Building on this milestone, the hotel achieved in 2025 the highest level of certification from Control Union, an accredited body of the Global Sustainable Tourism Council (GSTC), further validating its leadership in responsible tourism.

Sustainability engagement also extends beyond operations: through the on-site Earth Lab, guests and community stakeholders are invited to take part in events, hands-on workshops and interactive talks that connect environmental stewardship with culture, community, and ecology.

A one-night stay at Six Senses Rome starts from £1,000 per night.
